2 jalapeno peppers 1 habenero pepper 2 mangoes 3 medium sized cloves of garlic Olive Oil Red Wine Vinegar Salt to taste (cilantro or parsley to garnish)
Dice both mangoes, put in a bowl and set those nummy chunks aside. In a medium sauce pan, get about a teaspoon and a half of olive oil up to heat. Mince three cloves of garlic and get them sweating in the skillet over a low heat. Slice open jalapenos and habenero and depending on how much fire you want, remove some or all of the seeds and ribs. Dice and add to the garlic. Simmer for 4-5 minutes until peppers are tender and then add mango. Let simmer for another 5 minutes and then add 1-2 table spoons of the vinegar to taste. The vinegar cuts some of the heat of the peppers so the more you add the milder the chutney becomes. Continue simmering for another 10 minutes...salt to taste and voila! Spicy Spank You Mango Chutney
